According to Raja, owner of Garden Cafe, the origin of most Lebanese dishes is lost in history. Several thousands of years of different civilizations, immigrations and cultures created these exquisite dishes and then Lebanese chefs took them around the world. Lebanese cuisine began with the earliest civilizations from the Euphrates and Tigris areas of Iraq. Then Egyptian flavors from the Nile were brought in and mixed with Armenian and Persian spices and methods. The Byzantines added delicacy and brilliance and the Ottomans, during their 500-year rule, integrated and expanded the cuisine. The result is colorful and exotic food that features vegetables, legumes, wheat and yoghurt. Spices change from dish to dish, some using peppers and cilantro, others cardamom or even cinnamon. The recipes are simple, says Raja, but it is the balance of flavors that is important. Garden Café features most of these traditional Middle Eastern dishes like taboule, falafel, humus, stuffed grape leaves and baba ganoush. But since Raja lived almost half his life in Venezuela before moving to Bonaire, he offers special dishes from his second home too. Garden Café can be found on Kaya Grandi just South of de Friewieler. In its new location Garden Cafe has added Pizza and Grilled Meats to our menu. Raja is looking forward to sharing his family's special dishes with you at the Garden Cafe.
